Ghost Brownies

One of the things I missed whilst being away travelling was baking, I find it therapeutic and love creating something out of nothing. Whilst away I starting to plan what I wanted to make once back in the UK and seeing as I love anything themed, I thought Halloween was the perfect occasion to get started with. I spotted these ghost brownies when browsing the internet for baking inspiration and loved them as soon as I saw them. I'm always putting different toppings on my brownies (toffee, Cadbury cream eggs, chocolate orange, Kinder Buenos...) and thought these were too cute.

The ghost brownies are really easy to make and I'm really happy with how they turned out! Here's how to make them:

Step 1: Make the brownies
  • 4 medium eggs 
  • 500g caster sugar
  • 325g unsalted butter
  • 125g cocoa powder
  • 1tsp vanilla essence
  • 250g plain flour
Preheat the oven to 150 degrees. Beat together the eggs and sugar until the mix is pale. Melt the butter in a pan over a gentle heat and stir in the cocoa powder, then add in the egg mixture. Add the vanilla and flour, and stir well. Pour the whole batch into the baking in and cook foe 20-25 minutes. Leave until cold before putting the marshmallows and vanilla frosting on.

Step 2: Whip up some vanilla frosting
  • 250g icing sugar
  • 80 g unsalted butter
  • 50ml milk
  • 1tsp of vanilla essence
Firstly, mix together the icing sugar and unsalted butter. I find it easier when using an electric mixer as it becomes creamier a lot quicker and doesn't hurt your arms in the process. When the ingredient have been mixed together add in the milk and vanilla essence. Once done, pop it in the microwave for 15 seconds so it can be easily poured onto the marshmallows. 

Step 3: Bring the ghosts to life
  • Marshmallows
  • Black food paste 
Place the marshmallows onto the brownies and then pour over them the vanilla frosting, then let it set. Once the frosting is dry you can decorate your ghosts with the black food paste and make them look as scary or cute as you want.
